Chef Shaun Hergatt is the executive chef of Juni, a boutique restaurant located within Manhattan’s Hotel Chandler. An intimate affair between the guest and chef, the 50-seat restaurant offers an evolving menu that showcases the bounty of the seasons and ingredients when they are at their freshest and finest. Growing up in a culinary-oriented family in Cairns, Australia, Chef Hergatt was enamored with cooking from a young age. At 17, he pursued a four-year apprenticeship at Crystal Twig, a fine dining restaurant in Cairns where he was trained in classic French cooking. He then moved to Sydney and in 1997, became chef de cuisine of The Dining Room at The Ritz-Carlton. In 2000, Chef Hergatt transferred to The Ritz-Carlton, Central Park in New York City. Five years later, he moved to The Setai in Miami. In 2009, Chef Hergatt returned to New York to open his restaurant, SHO Shaun Hergatt in the Financial District. Juni received “Best New Restaurant” accolades from Esquire in 2013.
